4 sirloin steaks (7 oz. each), cut into 1/2" thick pieces ·
2 shallots, finely chopped ·
1 large white onion, thinly sliced ·
1 large carrot, thinly sliced ·
1 large garlic clove, chopped ·
2 tablespoons steak seasoning ·
1 cup white wine ·
1/2 cup vinegar ·
1/2 cup water ·
1 pinch of sugar ·
1/4 cup olive oil ·
salt and pepper, to taste

This is best prepared overnight. Place steaks in a glass bowl. Add all of the ingredientes except the water, sugar and oil. Cover and refrigerate. Remember to turn several times, handling the meat without piercing it. Put the marinating ingredientes in a small enamel or stainless steel pot. Add the water and sugar. Stir well and cover. Remove the pieces of meat and leave them on the side. Cook over medium heat until the carrot is soft. Pour the contents of the pot in the blender. Blend at high speed for 1 minute. Pour back into the pot. Adjust seasoning. Saute the steaks in shallow hot fat until brown on both sides. The steaks should be rare. While the meat is frying, heat the sauce. Serve the steaks on a platter and pour the sauce over them. Accompany with mashed potatoes and steamed broccoli.
